Ingredients:
- 2 cups cooked chicken, shredded or diced (leftover rotisserie chicken works great)
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1/4 cup celery, finely chopped
- 1/4 cup red onion, finely chopped
- 1/4 cup sweet pickle relish (optional)
- 1/4 cup chopped fresh parsley or dill
- Salt and pepper to taste
- 8 slices of your favorite bread (whole wheat, sourdough, or a baguette)
- Lettuce leaves (optional)
- Tomato slices (optional)
Get the chicken salad ready by:
Add the chopped or shredded chicken, lemon juice, Dijon mustard, and mayonnaise to a large mixing bowl. Thoroughly mix until the chicken is coated all over.
Add the red onion, chopped celery, chopped fresh herbs, and sweet pickle relish (if using). Mixing the components thoroughly requires stirring.
To taste, add salt and pepper for seasoning. To get the right amount of creaminess and flavour, experiment with different amounts of mayonnaise and mustard.
Put the Sandwich Together:
Arrange the slices of bread on a sanitised surface. Toast the bread slices slightly if you’d like them to have more flavour and texture.
For each sandwich, evenly distribute the chicken salad mixture over one slice of bread.
Top the chicken salad with tomato slices and a lettuce leaf, if you’d like.
Finish the sandwich by placing the second slice of bread on top.
Serve:
If desired, cut the sandwich in half and serve right away.
Advice: You may make this lighter by replacing some or all of the mayonnaise with Greek yoghurt.
For added texture and flavour, mix in a handful of chopped nuts (like almonds or walnuts) or dried fruit (like cranberries or grapes).
For a full dinner, serve with chips, a green salad, or a side of fresh fruit.
